Pink Beet Pasta 🍝

Did you know you can turn ordinary pasta pink using beets? This super easy addition adds a vibrant look to otherwise ordinary pasta. Serve with your favorite sauce and enjoy!

Ingredients:

  • Β½ lb farfalle pasta
  • 2 roasted beets
  • Parmesan cheese
  • 2 garlic cloves
  • Cherry tomatoes
  • Olive oil
  • Salt
  • Pasta sauce of choice

 

Instructions:

Cook pasta until al dente, set aside. In a food processor add beets, chopped garlic, a dash of olive oil and salt and pulse until it resembles a pesto. Toss the pasta in the sauce until thoroughly covered. Serve as is or rise off to just get pink pasta then serve with grated Parmesan, sherry tomatoes and your favorite pasta sauce.
